New Restaurant Latuli Opens in Houston’s Memorial Neighborhood with Gulf Coast-Inspired Menu

Smoked redfish dip, boar ragu pasta, and steaks from Texas ranches are just the beginning at Latuli, now open in Memorial.

The new restaurant from chef Bryan Caswell and hospitality entrepreneur Allison Knight is now open at 8900 Gaylord Drive. The concept brings Gulf Coast cooking into conversation with global flavors, offering a mix of seafood, steak, and comforting pasta dishes in a warm, carefully designed space.

The opening menu includes smoked redfish dip, pimento cheese, double-cut pork chops, and rock shrimp tacos. There’s also a section called “Roman Holiday” featuring plates like spaghetti with tomato gravy and meatballs, pepperoni pizza with pickled serranos, and fried mafalde pasta with wild boar ragu. The menu reflects Caswell’s Gulf Coast roots and a wide range of global influences, from Italian to Cajun to Asian. A kids menu makes the restaurant an easy pick for families too.

Latuli takes its steak program seriously. The restaurant sources beef from Texas ranches including Rafter K, 44 Farms, and RC Ranch.

The space was built from the ground up and designed by Alfredo Paredes Studio. Inside, there’s a dedicated adults-only bar featuring art from Knight’s personal collection, including pieces by Fritz Scholder and John Cowan. The dining room includes two private event spaces and a second-floor room with its own bar. Outside, a covered patio with a fireplace and heaters overlooks a landscaped green space where guests can relax or play lawn games.

The wine list, curated by Houston sommelier Jeb Stuart, features 100 bottles with an emphasis on small, family-run producers who prioritize sustainable or biodynamic practices. Prices range from $45 to $300, offering something for both casual diners and collectors. Wines by the glass include a pét-nat from William Chris Vineyards in Texas, a Basque rosé from Ameztoi, and Chardonnay from Sandhi. The cocktail menu is designed to be flavorful without overwhelming the food.

Tuesday and Wednesday 5 to 10 p.m.
Thursday through Saturday 5 to 11 p.m.
Sunday 5 to 9 p.m.
